The following flavors are inspired by seasonal wedding themes, but most are available any time. Cardinal is happy to work with you to create a custom flavor upon your request! Cardinal's fruit gelèes are made in our kitchen starting with the highest quality fresh fruits. Buttercreams, caramels, and ganaches begin with sweet cream dairy butter, heavy cream and the finest European chocolate.
Kiss the Bride!
Just tart enough to make you pucker up, but so sweet and enticing, you'll be sneaking back for more! Delicately flavored lemon cake flecked with a confetti of lemon zest (featuring sweet and mild Meyer lemons in the early spring season) filled with Raspberry gelèe. Absolutely beautiful when cut and served.

Spring in Paris
Fluffy as the beat of an angel's wings, layers of Heavenly White Wedding cake are dotted with whole raspberries and filled with delicately infused rosewater whipped buttercream.
A refreshing spin on Italian cream cake. A dense, beautifully pale green citrine cake made with olive oil and blood orange zest and studded with honey-roasted pistachios. The surprise? The filling: citrusy blood-orange curd makes beautiful slices with its rosey-peach hue. This cake is as toothsome as it is refreshing.
Peaches and Cream
Buttery yellow cake with just a touch of freshly grated nutmeg. Between the layers? Fresh peaches cooked in their own juice with cinnamon and a pinch more nutmeg for good measure. Filled with whipped, creamy buttercream. Every bite is summer in a spoon!
Love Me Tender
An island inspired delight! Light and refreshing, not-too-sweet pineapple cake envelops coconut shavings. The star of this cake is it's tantalizing "lava" filling, featuring mango butter and strawberry gelèe. So yummy, you'll sacrifice yourself to the volcano gods (or go back for seconds...)
How do we do it? We put the lime in the coconut and shake it all up! It is just that simple: A light and fluffy coconut cake filled with Key Lime curd.

State Fair Caramel Apple
The men's favorite, hands down. A great flavor for groom's cake! Our State Fair Caramel Apple starts with our home-made applesauce cake flavored with fresh ground cinnamon, nutmeg and a hint of cardamom. Then, fresh honeycrisp apples are chunked, sprinkled with a little more spice and slow roasted to tender and juicy perfection. Not exciting enough? Sandwiched between the cake layers, those roasted apple chunks are smothered with our intoxicating, homemade rum-caramel sauce made with rum, butter, sugar and heavy cream right in our kitchen! Check the safety latch of your ferris wheel seat, because this cake will take you over the top!
Every year family members travel to Maui and are kind enough to return with gifts of macadamia nut turtles. Those turtles last about 3 minutes, but the memory of them last all year! This cake is inspired by those candies of a similar name. Layers of rich and buttery caramel cake studded with bits of toffee, and filled with brown sugar roasted macadamia nut crunch and chocolate ganache. All at once exotic and comforting.

A time-honored classic, we see no reason to spin this dessert. This carrot cake is as endearing and reliable as your one true love. Rich, moist spice cake studded with shredded carrots, pineapple tidbits, and distinctive American black walnuts (or pecans if you prefer.) Filled with the simple and delicious cream cheese buttercream.

Breakfast for dessert! What could be a better way to warm up than with a cinnamon bun inspired cake? Butter cake flavored with cinnamon and dotted with cinnamon-white chocolate chips. These layers are filled with cream cheese buttercream. Sticky buns more your thing? Add a layer of caramelized pecans and rum caramel for ooey-gooey goodness.
